Coconut Collagen jelly Recipe
Ingredients
3 Tbs gelatin , I add an extra 2 Tbs Collagen body by Nutra organics.
200ml coconut water.
2 cans coconut cream (400ml each).
3 Tbs Monk fruit sugar.
2 Tbs rose water (optional)
½ tsp of xanthium gum (optional, it helps to stop the coconut cream separating into to levels when setting)
Ingredients
In a large bowl sprinkle gelatin, collagen and xanthium over water and let it bloom and rehydrate.
Pour coconut cream into a saucepan and heat (but not to boiling) add monk fruit sugar and rose water.
Whisk gelatin, collagen, and water mixture until smooth.
Once sugar is dissolved pore mixture over gelatin mixture and whisk until combined.
Pour into a glass/pyrex loaf or slice dish. Cool and place in fridge for 2 hours.
Once it is set slice into cubes and enjoy.
Note: it can be eaten as a dessert or snack. I like mine with fresh berries, a patient of mine sprinkles hers with cinnamon. This recipe is Keto/dairy free.
Collagen is a structural protein that contains high amounts of glycine. Collagen provides strength for your muscles, skin, cartilage, blood, bones and ligaments. An easy and tasty way of consuming collagen is coconut jellies that are made with gelatin. Gelatin is a form of hydrolyzed collagen, which means it’s essentially a part of collagen.
Glycine in collagen is an amino acid that helps build proteins needed for tissue and hormone maintenance.
Glycine may help support heart and liver health, improve sleep, and reduce muscle loss. It may help with leaky Gut issues and inflammatory conditions. One of the ways you can consume glycine is by eating collagen.

Healing with foods
The change of season can bring on colds and flu. You can have symptoms of sore throat, headache, watering or painful eyes, runny nose, fevers and chills. There is numerus food/teas that we can consume to help alleviate the symptoms. One of my favorite teas to drink when I have these symptoms is honeysuckle, Chrysanthemum, and mint tea. This tea can soothe the throat, alleviate an headache, clear the phlegm and reduce fevers. Although this tea is consumed when you are sick with a cold or flu, you can drink this tea even when you aren’t sick. Thanks to the cooling and detoxing properties, this tea is ideal for hot summer days, for rebalancing the body after eating spicy and greasy foods, and for clearing excess liver fire and congestion.
Brewing guide: Rinse tea cup and teapot with hot water. Use about 2 teaspoons for every 500ml of water. Infuse in hot water for 2 to 4 minutes for the first and second brewing.
Another medicinal tea is Jujube, longan and wolfberry, it is a wonderful tea to drink to build the immunity and calm the mind.

Honeysuckle (Lonicera)
Honeysuckle (Lonicera) is more than just a beautiful flower. Many practitioners turn to the traditional honeysuckle herb for it healthy immune support properties. Honeysuckle flowers are used to clear the heat and toxins, they have an antibacterial and antiviral property that helps clear inflammatory and infectious conditions. Honeysuckle flowers are suitable for fever, swollen and sore throat, acne, stomach flu. In the past, honeysuckle infusions are also used externally to treat skin conditions such as eczema and acne, you can use honeysuckle tea in your DIY face mask.
Chrysanthemum (Chrysanthemi)
is well-known for its cooling properties to clear the heat in the lung and liver according to traditional Chinese medicine. It can help to treat common cold and upper respiratory tract infection, headaches, sore and dry eyes. Chrysanthemum flowers are suitable for cold and flu symptoms. Chrysanthemum tea can be used topically for dry, sore eyes and skin rashes
Peppermint (Mentha Bo He)
common fragrant herb that can help disperse heat conditions, making it useful to treat cold and flu symptoms especially headaches, chills and fever, cough or/and sore throat. Peppermint can also ease the symptoms of a weak appetite, IBS and calms anxiety.
