The yew is one of Britain's most fascinating—and dangerous—trees. 🌲☠️

Almost every part of the yew is highly toxic, including the leaves, bark, and seeds. Just a small amount can be fatal to people and livestock, so it's a tree to admire, not forage.

But even in death, the yew continues to support life. As the wood slowly decays, a variety of fungi move in, breaking it down and recycling nutrients back into the ecosystem. These fungi create habitat for insects and other woodland creatures, showing how nature transforms death into new life.

The yew reminds us that nature is full of contrasts—beautiful yet deadly, ancient yet constantly changing.

🌿 Hogweed: Britain's most underrated wild spice!

Most people walk straight past it… but if you know what you're looking for, common hogweed seeds have an incredible flavour that's like cardamom, citrus zest, coriander and ginger all rolled into one. 🤯

For centuries they've been used to flavour food, and they're one of my favourite wild ingredients. Sprinkle them into curries, cakes, biscuits, cocktails, or even over roasted vegetables for a unique burst of flavour.

⚠️ Always be 100% certain of your identification. Never confuse common hogweed with giant hogweed, which can cause serious skin burns.

🌿 Ever heard of elderberry capers? 🤯

Most people wait for the berries... but the unopened green elderberries can be transformed into a delicious wild condiment that tastes surprisingly similar to traditional capers.

✨ Simply harvest the unripe, tightly closed elderberries, soak them in salted water, then preserve them in a vinegar pickle with herbs and spices. After a couple of weeks, they're ready to enjoy!

Perfect for: 🌱 Salads 🥔 New potatoes 🐟 Fish dishes 🥪 Sandwiches 🍝 Pasta

⚠️ Always use unripe green elderberries for capers. Ripe elderberries should be cooked before eating, and other parts of the elder plant should not be eaten without proper preparation.

Things have changed so much in the last few years, here's a to July 2022.

These were all done in June this year as it's been so hot! Means mushroom season is just around the corner and will be longer this year as long as we get some rain.
