Rachel is a font of knowledge when it comes to food and nourishment but what I love is how simple and doable she makes it all feel.

If you’re missing the dark bounty bars you’ll love these
Recipe
300/350ml greek yoghurt or thick soya yoghurt if dairy free
150g desiccated coconut
1 dessertspoon of maple syrup
3 bars of 70/80% dark chocolate
Place yoghurt in large roomy bowl, add the desiccated coconut and maple syrup and combine - you want it to hold it’s shape
Place in a lined square tin - and leave in the freezer 3/4 hours
Then melt the chocolate and place the cut rectangles into the chocolate
Place back in the fridge or freezer and enjoy
They are nice straight from the freezer or the fridge
I made these for friends and they were a big hit

Matcha and pistachio balls - these are worth the effort for a healthy treat
For 16 balls
Blend
50g pistachios
50g of cashew nuts
25g pumpkin seeds
50g sunflowers
Once you’ve whizzed these up
Add 7 pitted dates and a pinch of salt
Whizz for a few minutes
Then roll into balls
This time I rolled them in cacao powder

This is a salad I’m loving right now.
So colourful and nutrient dense
The salad dressing is one of my favs and all my clients love it - nothing fancy just really tastes good. In fact I’ll often have it over vegetables
Having some ready to go salad or vegetables is a must for me cause sometimes I just don’t have the headspace to do everything from scratch
