Ingredients:
•1 cup all purpose flour (add a little more if you prefer a thicker batter)
•¾ cup Lois' Banana Flour
•3 teaspoons baking powder
•2 tablespoons brown sugar
•¼ teaspoon salt
•1¼ cups milk
•3 tablespoons melted butter
•1 egg
•2 tablespoons Lois' Extra Virgin Coconut Oil, for cooking

Directions
1. In a large bowl, whisk together the all purpose flour, banana flour, baking powder, brown sugar, and salt.
2. In a separate bowl, combine the milk, melted butter, and egg.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
4. Heat 2 tablespoons of Lois' Extra Virgin Coconut Oil in a frying pan or griddle over medium heat.
5. Pour the batter into the pan and cook until bubbles appear on the surface and the edges begin to look dry, about 2–3 minutes.
6. Flip and cook for another 1–2 minutes, or until golden brown.
7. Serve warm with fresh fruit, honey, maple syrup, or your favourite toppings.

Yield: Approximately 6 medium sized pancakes or 4 large pancakes.
