This fresh salad is sweet and savory with flavors that POP!!
It makes an incredible light lunch that’s easy to pack for work. You can store the dressing and prepped ingredients in your fridge, and then simply assemble it for lunch on busy days. Make sure you keep the dressing on the side until you’re ready to eat!

Food Babe’s Strawberry Crunch Salad
(Makes 2 to 3 servings)
Ingredients:
2 cups mixed greens
2 cups baby spinach or arugula
1 cup sliced strawberries
1 avocado, peeled and diced
½ cucumber, thinly sliced
3 radishes, thinly sliced
¼ cup sliced almonds
¼ cup goat feta cheese
Vinaigrette:
¼ cup extra virgin olive oil
3 tablespoons apple cider vinegar
2 teaspoons raw honey
1 teaspoon dijon mustard
1 shallot, diced
Sea salt and ground black pepper
Directions:
1. Place all of the salad ingredients in a bowl and toss to combine.
2. To make the vinaigrette, whisk together ingredients. Pour over salad and serve.

I especially love this with heirloom tomatoes, which are sooo flavorful! This open-face sandwich makes an amazing appetizer to serve when you have company and also makes a great light lunch on busy days.

The lycopene in tomatoes has been shown to reduce your risk of heart disease and some types of cancer. And fresh basil is also packed with antioxidants, which help protect your cells from damage. It’s one of the healthiest herbs you can eat.

Food Babe’s Open Faced Caprese Sandwich
Ingredients (serves 2):
1/4 cup goat cheese
1 garlic clove, minced
handful basil leaves, chopped
ground black pepper
4 slices sourdough bread, lightly toasted
2 tomatoes, sliced
2 tablespoons extra virgin olive oil
2 to 3 tablespoons balsamic vinegar
Directions:
1. In a small bowl, mix together the goat cheese, garlic and basil. Season with a pinch of pepper.
2. To assemble, take one slice of the bread and spread some of the goat cheese on top. Add the tomato slices and top with a drizzle of olive oil and balsamic vinegar. Enjoy!
