Store bought nuggets have chemicals and silicon in them. Let’s cut out the bu****it and choose what’s best for us.

Here’s my chicken nugget recipe.

2.5 lbs farm local chicken breast
2 lbs of organic chickpeas
1 cup of the house-made bouillon (recipe posted earlier today)
Salt and pepper (generous amount)
A bowl of arrowroot starch
Avocado oil

I soaked the chickpeas last night.
Cooked them this morning with some of the bouillon. Drain but reserve a cup of the liquid.

Process it in batches with a bit of liquid to help it smooth out.
You’ll want the consistency to be like masa for tamales. Not completely smooth and puréed like hummus.
Season it with 1 cup of bouillon, salt and pepper.

Set aside.

Process chicken breast in batches.

Combine with chickpeas.

Shape them out. Dip in arrowroot. Prep it all out.

Preheat cast iron with oil (avocado oil!!)

Medium low heat.

Fry for like 90 seconds each side.

Store in freezer.

This recipe makes a weeks worth for 2 kids.

So yesterday I basically worked in a castle for new clients. They had the Austin Symphony Orchestra there for a private concert!

Anyways, that was a fun experience. Another one for the resume!
I didn’t get to take photos of food.. it’s always fast paced and never any time after apps are out.
It was all beautiful though! Clients and guests were very happy! That’s all that matters 💪🏽💓
