•Ingredients:
- 6 large eggs
- 1/2 cup crumbled feta cheese
- 1/2 cup milk (or cream for extra richness)
- 1 tablespoon olive oil
- 1/2 cup chopped spinach (or other veggies like tomatoes or bell peppers)
- 1 small onion, diced
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
•Instructions:
1. *Preheat the oven* to 375°F (190°C) and lightly grease a baking dish or oven-safe skillet.
2. *Sauté the veggies*: Heat olive oil in a pan over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add spinach (or other veggies) and cook until wilted. Remove from heat.
3. *Prepare the egg mixture*: In a bowl, whisk together eggs, milk, salt, pepper, and oregano. Stir in the sautéed veggies and crumbled feta.

💁🏼♀️ Chicken & brocoli 🥦
•Ingredients:
- 2 chicken breasts, boneless and skinless, cut into strips
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
- 1/2 teaspoon red pepper flakes (optional)
•Instructions:
1. *Cook the chicken*: Heat olive oil in a large skillet over medium heat. Season the chicken strips with salt, pepper, and oregano. Cook the chicken for 5-7 minutes, until golden and cooked through. Remove and set aside.
2. *Cook the broccoli*: In the same skillet, add a little more oil if needed and sauté the garlic for 1 minute. Add the broccoli and cook for 3-4 minutes, stirring occasionally. Add a splash of water or broth to help steam the broccoli.
3. *Combine*: Return the chicken to the skillet and drizzle with soy sauce and lemon juice. Stir everything together and cook for another 2-3 minutes.
4. *Serve*: Garnish with red pepper flakes if desired, and serve immediately.
