CREAMY HONEY MUSTARD CHICKEN
Tender chicken in a creamy homemade honey mustard sauce — an easy dinner that tastes rich and comforting but takes only about 25 minutes.

🛒 Ingredients (2 servings):
• 300 g (10.5 oz) chicken breast
• 1 tsp olive oil
• Salt & black pepper
• ½ tsp garlic powder
For the homemade sauce:
• 100 g (3.5 oz) Greek yogurt
• 1 tbsp Dijon mustard
• 2 tsp honey
• 1 tsp lemon juice
• 1 garlic clove, minced
• 2 tbsp water
• Fresh parsley

1️⃣ Cut the chicken into bite-sized pieces and season with salt, pepper, and garlic powder.
2️⃣ Heat the olive oil in a skillet and cook the chicken for 6–8 minutes, until golden and fully cooked.
3️⃣ In a small bowl, mix the Greek yogurt, Dijon mustard, honey, lemon juice, garlic, and water.
4️⃣ Reduce the heat to low and pour the sauce over the chicken.
5️⃣ Stir gently and cook for another 2–3 minutes. Avoid boiling the sauce so the yogurt stays creamy.
6️⃣ Sprinkle with fresh parsley and serve warm.

Method:
1. Mash half of the banana in a shallow bowl.
2. Add the egg and whisk until combined.
3. Dip both sides of the bread into the mixture.
4. Cook in a dry non-stick pan over medium-low heat for 2–3 minutes per side.
5. Slice the remaining banana and serve it with the French toast.

Ingredients:
* 1 small whole-wheat tortilla (40 g)
* 150 g egg whites
* 1 whole egg
* 20 g reduced-fat cheese, grated
* 50 g spinach
* 60 g tomatoes, chopped
* 30 g Greek yogurt
* Salt, black pepper and paprika
Instructions:
1. Cook the spinach and tomatoes in a non-stick pan for 2 minutes.
2. Add the egg whites and whole egg.
3. Season with salt, black pepper and paprika.
4. Cook while stirring until the eggs are ready.
5. Place the mixture onto the tortilla and add the cheese.
6. Fold and toast the wrap on both sides.
7. Serve with Greek yogurt.

Instructions:
1. Combine the ground turkey, breadcrumbs, mustard and seasonings.
2. Shape the mixture into small meatballs.
3. Place them on a lined baking tray.
4. Bake at 200°C/390°F for 18–20 minutes, turning halfway through.
5. Mix the Greek yogurt with lemon juice and fresh dill.
6. Add the cooked bulgur, cucumber and tomatoes to a bowl.
7. Top with the turkey meatballs, yogurt sauce and olive oil.

4. Heat the remaining olive oil in a pan.
5. Add the garlic and shrimp.
6. Cook the shrimp for 2–3 minutes on each side.
7. Add the lemon juice and serve with the potatoes and green beans.
8. Garnish with fresh parsley.

* 40 g feta cheese
Method:
1. Cut the chicken breast and zucchini into bite-sized pieces.
2. Place them in a small baking dish lined with parchment paper.
3. Bake at 200°C / 400°F for 20 minutes.
4. Crumble the feta cheese on top and bake for another 5–7 minutes, until the chicken is fully cooked.
