Ingredients
The Fish:
2 salmon fillets (about 4–6 oz each),
1 tsp olive oil, salt, pepper, and garlic powder to taste
Salad Base:
5 oz baby spinach or arugula,
1 cup cooked and cooled quinoa
Brain Boosters: 1 cup fresh blueberries,
1/2 cup chopped pecans or walnuts (toasted),
1 diced ripe avocado
Dressing:
3 tbsp extra-virgin olive oil,
1.5 tbsp fresh lemon juice,
1 tbsp honey, a pinch of salt
Instructions
Cook Quinoa:
Boil 1/2 cup uncooked quinoa in 1 cup water for 15 minutes.
Fluff and let cool.
Cook Salmon: Season fillets with salt, pepper, and garlic powder.
Heat 1 tsp olive oil in a skillet over medium-high heat.
Sear salmon for 4–5 minutes per side until flaky.
Let it rest, then flake into bite-sized pieces.
Make Dressing:
Whisk 3 tbsp olive oil, lemon juice, honey, and a pinch of salt in a small bowl.
Assemble & Toss:
Combine greens, cooled quinoa, blueberries, toasted nuts, and diced avocado in a large bowl. Drizzle with dressing, toss gently, and top with the flaked salmon
