The essentials.

Here's my high-cal, high-joy pasta recipe:

Ingredients:
200–250g spaghetti
2–3 tbsp butter
1–2 tsp Vegemite (adjust to taste)
2–3 tbsp pasta water
Freshly grated Parmesan
Grated Gruyère cheese
Dried chilli flakes

Method:
Cook the spaghetti according to the packet instructions. Reserve a few tablespoons of pasta water, then drain.
Melt the butter in a saucepan and stir in the Vegemite to taste. Add a splash of pasta water if needed.
Toss the spaghetti through the sauce until well coated.
Serve topped with freshly grated Parmesan and Gruyère, plus dried chilli flakes if desired.

Tip: Start with 1 teaspoon of Vegemite and add more to suit your taste.
