IT'S NACHO TUESDAY! ππ½ β β
And what better than to replace the corn chips with sweet potato chips! π πβ β

ππ½ 2 Large Sweet Potatoβs (600g roughly)β β
ππ½ 2x Tsp Olive Oil (see the method as separately used)β β
ππ½ 1 Tsp Sea Saltβ β
ππ½ 1 Tsp Dried Rosemaryβ β
ππ½ 3 Tomatoes, diced β β
ππ½ 1β2 Red Onion, dicedβ β
ππ½ 1 Long Red Chilli, dicedβ β
ππ½ 1 Lebanese Cucumber, dicedβ β
ππ½ 1β4 Cup Fresh Coriander, chopped β β
ππ½ Juice of 1 Limeβ β
ππ½ 1 large Avocadoβ β
ππ½ 1β2 Cup Black Beansβ β
ππ½ Salt & Pepper to tasteβ β

Preheat the oven to 180 degrees Celsius and line two baking trays with baking paper. Wash the sweet potatoes thoroughly, leaving the skin on, thinly slice into discs and lay on a baking tray. Drizzle the olive oil, salt and rosemary over then cook for 15-20 minutes or until cooked. Turn if required.β β

While the chips are cooking, place the tomatoes (reserving 2 tablespoons for the guacamole), chilli (remove seeds for less spice), onion, cucumber and coriander in a large mixing bowl. Add half of the lime juice, the second teaspoon of olive oil, salt and pepper to taste and mix together well.β β

To make guacamole, place half the avocado flesh in a bowl, the reserved 2 tablespoons of tomatoes, remaining lime juice and salt and pepper to taste. Mash together with a fork.β β

Heat or smash the black beans ready to top, whichever you prefer.β β
Once the sweet potato chips are cooked, spread on a plate, top with the tomato salsa, beans and guacamole. ENJOY! π₯°β β
