মধুতে রয়েছে অনেকগুলো প্রয়োজনীয় খাদ্যউপাদান । তার মধ্যে কয়েকটি হল

🍂সুন্দরবনের সকল ফুলের মধু ই তুলনামূলক পাতলা হয়। কেনো হয়? ময়েশ্চারের পরিমাণ কিছুটা বেশি থাকে এই মধুতে।

🌸মধু ফ্রিজে রাখছি জমলো কেনো! এটা ভেজাল।
মধু ফ্রিজে রেখে জমলোনা কেনো এটা ভেজাল।

🍂ফ্রিজে রাখা মধুর বিশুদ্ধতা পরীক্ষার কোনো উপায় না (আমি যতোদূর জানি)। মধুতে প্রচুর পরিমাণে গ্লুকোজ (ফ্রুক্টোজ ও সুক্রোজ রূপে) থাকে। সুতরাং বাইরে থেকে চিনির সিরা গুড় ইত্যাদি মিশাক না মিশাক জমতে পারে। বাইরে রাখলেও জমতে পারে।
বাইরে রাখার ক্ষেত্রে সুন্দরবনের মধু জমার হার অনেক কম। কারণ ফ্রুক্টোজের পরিমাণ অধিক এতে। খলিশার টা জমার হার আরও কম৷

🌸🌸🌸 গুগোল করে ও অভিজ্ঞ মানুষদের থেকে জানলে মধুর বিশুদ্ধতা পরীক্ষার অনেক উপায় পাওয়া যায় । তার থেকে কিছু আসলে সঠিক।

আসলে মধুতে কিন্তু চিনির মূল জিনিস সুক্রোজ থাকবেই। মধুতে গ্লুকোজের দুইটা রূপই থাকে, সুক্রোজ আর ফ্রুক্টোজ। যে মধুতে ফ্রুক্টোজের পরিমাণ যতো বেশি তা জমার পরিমাণ ততো কম৷ সুন্দরবনের মধুতে ফ্রুক্টোজের পরিমাণ টা বেশ বেশি। এই জন্যে এই মধু জমার হার খুব কম৷ খলিশার টা তো জমেনা বললেই চলে।

আমাদের অনেকের বিশ্বাস মধু ফ্রিজে রাখলে জমে / জমেনা, এটা মধুর বিশুদ্ধতার পরীক্ষা৷ আসলে এর কোনো প্রমাণ নেই। তবে মধু ফ্রিজে রাখলে গুণাগুণ কিছুটা হলেও ক্ষতিগ্রস্ত হয়৷

সুন্দরবনের মধুর একটি বিশেষ বৈশিষ্ট্য হলো ঝাকি লাগলে, পাত্র পরিবর্তন করলে ফেনার মতো বুদবুদ জমে উপরের দিকে।
