1.5 gallons of kimchi fermenting for 4-7 days ! This is going to be super spicy and delicious but I now need to make a mild version with the kids that they can eat as they enjoyed the process and the individual flavors of eat ingredient.

From this to that. I'm fermenting hot chilli peppers from the garden and I wasn't quite happy how it wqs settling, so I took some clean Bok Choy leaves to suppress all the bits of chilli and garlic down to submerge it in the ferment brine. Should be ready to blend and bottle up in a few more weeks !
