When I first started decorating cookies, I bought my meringue powder from the bulk store because it fit my budget. And honestly? It worked. When you’re just getting started, you do what you can with what you have.

What I didn’t realize at the time was how much extra work I was putting into my royal icing. I was constantly adjusting the consistency, trying to smooth out the texture, and wondering why my icing wasn’t behaving the way everyone else has seem to be.

As I gained more experience, I decided to try a premium meringue powder. The difference wasn’t that I suddenly became a better decorator, it was that I could spend more time decorating and less time troubleshooting my icing.

A quality meringue powder can give you:
Smoother royal icing
Better consistency from batch to batch
Less grit
Stronger structure for decorating
Reliable results in baking and meringues too

If you are using bulk meringue powder, and it’s working well for you, that’s wonderful! There isn’t one right way to bake. But if you’ve been struggling with inconsistent icing, your ingredients might be part of the reason, not your skills.

Baking has enough challenges already. Sometimes using a higher quality ingredients, simply removes one of those hurdles and lets you focus on the fun part: creating.
