This is a ONE BOWL, Super SIMPLE, Dairy Free, Gluten Free & Delicious
Coconut Flour Pancake Recipe!

Coconut Flour is a very healthy alternative to other flours because it's full of healthy fats, fibre and protein.
It's low glycemic, aids in metabolism, helps maintain a healthy blood sugar level and helps with digestive health 🤩
👉 Here is the Recipe: Makes 6 Servings (good for 6 people - Cut recipe in half for 3 servings 😉)
👉 In one medium size bowl add the following ingredients and whisk together until there are no lumps and the batter is smooth.
👉1 cup Coconut Flour
👉12 Eggs (I use organic pasture raised eggs)
👉120ml or 1/2 cup Pure Avocado Oil
👉120ml or 1/2 cup Pure Maple Syrup
👉4 tsp pure vanilla extract
👉4 tsp baking powder (aluminum free)
👉1/2 tsp fine sea salt or himalyan salt
(I use himalyan)
👉IF YOU WANT TO MAKE THEM CHOCOLATE CHIP...you will add the chocolate chips to the pancakes once you place the batter on the skillet) - I like Lily’s , enjoy life and Kirkland 51% cacao chocolate chips.
DIRECTIONS:
In a lightly greased skillet, over medium heat, add a 1/4 cup of batter and lightly spread batter with the bottom of your measuring cup to make it an even thickness.
Allow to cook on one side for about 5 - 6 minutes. With a spatula, gently lift the pancake to flip.
NOTE: If the pancake is sticking to the spatula and coming apart when trying to flip, the pancake just needs a little more time to cook. You'll know it's ready to flip when it doesn't stick to the spatula.
Then cook on the other side for another 4-5minutes.
Repeat the process with remaining batter.
Serve with your favourite toppings. I like organic berries and almond butter. My kids also love adding coconut whip cream and some extra maple syrup.
Enjoy!
You can also save them in the fridge in an airtight container for up to 3 days. When rewarming, I like to place them in a glass, oven proof dish, cover with foil and bake for a few minutes at 350F until desired temperature.

Fruits & Vegetables play a critical role in our health! You should be consuming 7 cups of vegetables daily!! Therefore, it's so important to make sure the fruits & vegetables we buy and consume are low in toxic, carcinogenic pesticides.
This CLEAN 15 list, shows you the top 15 produce items you may buy as non-organic because they have the lowest amounts of pesticide residues,
according to EWG’s (Environmental Working Group) analysis of the most recent USDA test data.
⚠️This is a very important list to have when shopping so 💾SAVE IT! & SHARE IT so your friends & Family can use it too!
HERE ARE SOME CLEAN 15 FACTS:
👉🏼Avocados & sweet corn were the cleanest. Fewer than 2% of samples showed any detectable pesticides.
👉🏼The first seven Clean 15 crops tested positive for three or fewer pesticides on a single sample.
👉🏼Almost 70 % of Clean Fifteen fruit and vegetable samples had no pesticide residues.
👉🏼Multiple pesticide residues are extremely rare on Clean Fifteen vegetables. Only 8 % of Clean Fifteen fruit and vegetable samples had two or more pesticides.
The 2021 EWG Guide ranks the pesticide contamination of 46 popular fruits & vegetables. It is based on results of more than 46,000 samples of produce tested by the DOA & the FDA.
Numerous peer-reviewed scientific studies have shown that consuming produce high in pesticide residues (like the items on the Dirty Dozen list - see my last post for the Dirty Dozen list)
increases the risk of many negative health impacts, and that choosing organic can have almost immediate impacts on the amount of residues in a person’s body.
SO...when buying produce, always try to select the items with the lowest pesticide residues by looking at the DIRTY DOZEN & CLEAN 15 LISTS. Buy organic versions of items on the Dirty Dozen List & either organic or non-organic versions of produce on the Clean 15 list. There are also many organic and Clean Fifteen options in the frozen food aisle.
WATCH OUT FOR GMO'S...GMOs, are most commonly found in zucchini,
yellow squash, sweet corn, papaya & apples in U.S. & Canada markets, BE AWARE that Papayas in particular are predominantly GMO! Buy organic!

Fruits & Vegetables are a critical componant to a healthy diet! However, nearly 70 percent of the non-organic fresh produce grown in the U.S.
contains residues of harmful chemical pesticides 😱
Even if you wash, peel or scrub your produce, it does NOT take away the pesticide contamination 🤯
The DIRTY DOZEN is a list of the top 12 produce items that have the Highest amounts of pesticide contamination than any other crop according to the EWG's (Environmental Working Group) analysis of the latest test data from the FDA.
It's a great Refrence Guide you can have with you every time you shop (so be sure to 💾 SAVE IT, so you have it for later! & SHARE it to help spread the word to others too) 🤗
WHY ARE PESTICIDES BAD FOR YOU?
Pesticides can cause many adverse healthy effects such as:
👉🏼stinging eyes
👉🏼rashes
👉🏼blisters
👉🏼nausea
👉🏼dizziness
👉🏼diarrhea
👉🏼cancers
👉🏼birth defects
👉🏼reproductive harm
👉🏼neurological and developmental toxicity
👉🏼immunotoxicity
👉🏼disruption of the endocrine system
Etc....
Infants 👶 and children 👦👧 are more vulnerable than adults to the toxic effects of pesticides...
In 2012, the American Academy of Pediatrics issued a report that said children have “unique susceptibilities
to [pesticide residues’] potential toxicity.” The academy cited research that linked pesticide exposures in early life to:
👉🏼pediatric cancers
👉🏼decreased cognitive function and
👉🏼behavioral problems.
SOME DIRTY DOZEN FACTS:
👉🏼More than 90 percent of samples of strawberries, apples, cherries, spinach, nectarines, and leafy greens tested positive for residues of two or more pesticides.
👉🏼A single sample of kale, collard & mustard greens had up to 20 different pesticides!
👉🏼On average, spinach samples had 1.8 times as much pesticide residue by weight as any other crop tested.
👉🏼Hot peppers and bell peppers had the most pesticides detected.
This is why it's important to understand which items are the most contaminated and to only buy those Organic!!

Have you ever heard of Sungazing for increased health & healing? Do you know how to sungaze? If not, read to find out & please SHARE it!! It's life changing info! Be Sure to Save it so you can refer to it when you start your sungazing practice 🌞 😉 Sungazing is an ancient practice. When you look at the sun (AT A CERTAIN TIME OF THE DAY) the sun will NOT
damage your eyes!! In fact, it can make your eye sight better!
SO what is the SAFE TIME OF DAY to sungaze? It is ONLY during the first hour of the morning when the sun is rising &
the last hour when the sun is setting.
HERE ARE SOME OF THE SCIENTIFICALLY STUDIED BENEFITS OF SUNGAZING:
1. It provides the body with necessary Chi or Prana (life force energy) & when absorbed through the eyes can help to reduce stress, worry, anxiety, fear, anger, sadness.
2. Improved eyesight
3. Reduces hunger, body is completely nourished by the sun.
4. Increased energy
5. Stimulation & growth of the Pineal gland (your third eye).
6. Boosts production of the feel good hormones serotonin & melatonin.
7. Increases personal potential.
HOW TO START THE PRACTICE OF SUNGAZING:
1) Practice only during the first hour of the sunrise, or the last hour before the sun completely sets.
(If the proper sun gazing times are not followed you can damage your eyes from the UV rays).
2) Stand barefoot on bare earth. This helps to keep you grounded and enhances the benefits of sungazing.
3) DAY 1 - start by spending 10 sec looking directly at the sun always during the safe hours.
4) DAY 2 - stare at the sun for 20 sec
6) DAY 3 - Stare at the sun for 30 sec, continue adding 10 sec to each day until you have reached a max. of 44 min.
NOTE: The length of time it will take to build up to 44 min. will depend on weather & how often you do it.
Go by how you feel & how well your eyes are adjusting to the sunlight. Use your intuition. You may be able to start with 15 sec daily and add 15 sec per day.
ALSO, if you have never done this before, start sungazing at the beginning of the sun rise and/or at the end portion of the sun set until your eyes have adapted & you are able to gaze longer. (see my comment ⬇️ for rest of info

LETS TALK ABOUT 🍋LEMONS🍋 They are my favourite fruit, not only does the colour and appearance just scream HEALTH & VIBRANCY, the list of health benefits when consuming this beautiful fruit is amazing! (So be sure to share this post to your stories and let your friends know the benefits too).
🍋I have my warm water and 1/2 lemon every morning on an empty stomach (I do add 1 tbsp of Apple cider vinegar to it, but we’ll leave ACV’s health benefits for another post 😉). So before you pick up that cup of Coffee, please do your body right and have a cup of warm water with 1/2 squeezed Fresh lemon 🍋 first! After all, coffee dehydrates you 😬 so it’s best to at least rehydrate your body first!!!

Did you know cauliflower is a Powerful SUPERFOOD? 🤔 let’s look some of the reasons why and then I’ll share my roasted cauliflower recipe 👍🏼
🤍 it’s very high in vitamin C
🤍 it’s very high in Choline (which is important for the liver and helps with focus and memory)
🤍 contains lots of phytonutrients that are proven to be anti inflammatory and anti “C” word (gotta be careful what I write so I don’t get censored 🧐)
🤍 contains powerful antioxidants like sulforaphane which help detox the liver and are also anti “C”
🤍it’s loaded with vitamins and minerals like vitamin K, B1, B2, B3, B5, Folate, magnesium, manganese & potassium!
🤍 it’s a perfect food on a keto diet
🤍only 5g of carbs per cup! 2 of those grams are fibre!
🤍 so many ways to prepare it like mash cauliflower, roasted, riced in a stir fry, pizza crust....
In this post I’m going to share my roasted Cauliflower Recipe 👇🏼
👉🏻place parchment paper on a large baking tray set aside
👉🏻 preheat oven to 375F
👉🏻wash 2 heads of cauliflower and cut into small pieces, place in a single layer on a baking tray
👉🏻 drizzle a approx 3-4 tbsp of avocado oil over cauliflower and toss to coat all the cauliflower
👉🏻 sprinkle Himalayan salt, organic garlic powder and organic onion powder over the cauliflower and toss one more time.
👉🏻 place cauliflower in the oven for 20min , remove from oven, toss and return to oven for another approx 15-20min or until completely golden brown in colour. Keep an eye on it the last 10min to make sure it doesn’t burn.
👉🏻optional, top with nutritional yeast (loaded with B vitamins) for even more health benefits!!

Homemade 70% Dark Chocolate Peanut Butter & Almond Butter Cups!! 🤤🤤🤤 RECIPE BELOW 👇🏼 These are super easy to make and only require 2 ingredients (chocolate & almond or peanut butter or any nut butter /nut free butter you like). These are full of healthy fats and antioxidants from the dark chocolate AND they taste better then the ones we grew up on (full of chemicals 🤢 you know the brand 😉) make these once and you’ll never look back...RECIPE MAKES 12 MEGA SIZE CUPS 🙌🏼
Ingredients:
400g of dark chocolate 70% or higher
Organic 100% natural peanut butter OR Almond butter or nut butter of your choice)
Directions:
Place 12 parchment paper cups in muffin tin
Melt chocolate over a double boiler (I use a pot with water and place a bowl on top with chocolate - swipe to see picture).
Once fully melted place a heaping TBSP of melted chocolate at the bottom of the baking cup.
Then place a heaping Tbsp of nut butter on top.
Finish by covering the nut butter with another layer of melted chocolate.
Place tray in freezer for 20-30min to harden chocolate again.
Take out and ENJOY!
Can be placed in an airtight container and left on the counter for 4 days or placed in the fridge to last longer. But they won’t 😉 I’m lucky if they last 2 days in my house 😄

Nothing like some baked Organic Gala Apples 🍎 brushed with maple syrup and sprinkled with Pumpkin Pie Spice 🤤. I made these in the toaster over for the kids to enjoy a mid morning snack while I prepare Thanksgiving dinner 😊. Just Bake at 300F for about 25min. Happy Thanksgiving to my fellow Canadians 🇨🇦.
