Vegetables soup ingredients.

The following are the quantities of ingredients I used to prepare two (2) medium tubs of vegetable soup

: 2kg frozen spinach (ugu)
:250g lambs lettuce
:2kg Assorted meat
: Stock fish
:4 table spoon ground crayfish
:6 small knorr cubes
: Red pepper
:2 big bulb of onion
:1and half cup red oil
: Salt (to taste)

Before u prepare the vegetable soup.

1:Bring out the frozen spinach in the evening before and keep it on ur kitchen counter to defrost on it own . It is no advisable to use a microwave oven to defrost the frozen spinach.

2:cut the meat into medium pieces.
3: for best results, use red meat.
4:chop the onion and peppers.
5: Grind the crayfish
6: when the spinach defrost, chop into into smaller pieces
7: cut off the roots of the lambs lettuce and slice.

Directions for making the vegetable soup.

1: cook the meat and stock fish with the seasoning cubes .
2: when done remove all the meat and fish and set aside
3: De-bone and separate the stock fish into small pieces
4: make sure the stock fish is as little as possible if not boil it down before continuing .
5:set the stock on the stove, add palm oil, crayfish, the remaining chopped onions cover and cook for 7minuts to allow the palm oil integrate.
6: add the pepper and lambs lettuce, the meat and fish.
7: cover and once it boils again, add the spinach.
8: cover and once it boils again, stir it very well and add salt if necessary.
9: transfer the soup to cool container immediately so the vegetable do not change color.

That's it serve with any Nigerian fufu meal .
