* 1½ cups dried yellow split peas, rinsed

* 1 medium onion, finely chopped
* 2 celery stalks, diced
* 3 garlic cloves, minced
* 2 bay leaves
* 1 tsp dried marjoram
* ½ tsp dried thyme
* ½ tsp smoked paprika
* ½ tsp black pepper
* Salt, to taste
* 1 tbsp chopped fresh parsley
Method
1. Cook the bacon in a large pot until lightly crisp. Add the kielbasa and brown for 3–4 minutes.
2. Stir in the onion, carrots, celery, and garlic. Cook until slightly softened.
3. Add the split peas, broth, bay leaves, marjoram, thyme, paprika, and black pepper.
4. Bring to a boil, then reduce the heat and simmer gently for about 40 minutes.
5. Add the potatoes and continue cooking for 20–25 minutes, until the peas are very soft and the soup becomes naturally thick.
6. Remove the bay leaves and adjust the salt and pepper.
7. Finish with fresh parsley and serve hot with crusty bread.

* 1 tbsp oyster sauce
* 1 tbsp brown sugar
* 1 tsp sesame oil
* 1½ tsp freshly cracked black pepper
* ½ cup chicken broth
* 2 tsp cornstarch
Method
1. Toss the chicken with soy sauce, cornstarch, and ½ teaspoon black pepper. Let it rest for about 10 minutes.
2. Whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, black pepper, chicken broth, and cornstarch until smooth.
3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5–6 minutes, turning occasionally, until browned and cooked through. Transfer to a plate.
4. Add the remaining oil to the same pan. Stir-fry the onion and red bell pepper for 2–3 minutes, keeping them slightly crisp.
5. Add the garlic and cook for about 30 seconds, just until fragrant.
6. Return the chicken to the pan and pour in the prepared black pepper sauce.
7. Toss everything together for 2–3 minutes, until the sauce becomes thick, glossy, and coats the chicken and vegetables.

Method
Heat the oven to 160°C / 320°F.
Place the lamb in a roasting dish and make a few small cuts in the meat. Tuck in the sliced garlic, then rub with olive oil, lemon juice, oregano, rosemary, salt, and pepper.
Arrange the potatoes and shallots around the lamb. Pour the stock into the dish and cover tightly with parchment paper and foil.
Roast for 3½–4 hours, until the lamb is very tender.
Remove the covering, increase the oven to 220°C / 425°F, and roast for another 15–20 minutes until the lamb and potatoes are beautifully browned.
