Proper drying is one of the most important stages in crayfish preservation. It is not simply about leaving crayfish under the sun until it looks dry.

Well-dried crayfish should have very little moisture remaining. It should feel reasonably dry and firm rather than damp, sticky or unusually soft. Its natural aroma should also remain pleasant.

Why does this matter?

Moisture creates an environment where microorganisms can grow and can contribute to deterioration. Crayfish that has not been properly dried may therefore have a shorter storage life, especially when kept in warm or humid conditions.

However, even properly dried crayfish can spoil if it is badly stored. Once drying is complete, it should be protected from moisture, contamination and unnecessary exposure to air.

So, when buying dried crayfish, don't only ask:

“How much is it?”

Also ask:

“Was it properly dried, and how has it been stored?”

Those two questions can save you from buying stock that looks good today but becomes a problem later.
