Christmas Crack Recipe
Serves 12
Prep time: 20 min plus 45min of cooling time

125g plain salted crackers (I used Saladas)
125g salted butter
125g brown sugar 
150g mix of cranberries, almonds and cashews (I just used one bag of the Mother Earth brand)
250g dark chocolate chips
Pinch of salt 

Preheat your oven to 180 degC. 

Line a square 10 inch baking tin (or any oven tray with sides you have) with baking paper.

Place the crackers on the bottom of the tray in one layer. Set aside. 

To make the caramel crack: add the butter and brown sugar to a small saucepan. Over a medium heat bring the caramel to the boil and from there cook for another 1 minute, stirring constantly.

Remove the saucepan from the heat and pour the caramel mixture over the crackers and spread right to the edges. 

Place the tray in the oven and bake. Do 8 minutes for a lighter caramel or 10 minutes for a more toasty flavour- you decide. 

Remove the tray from the oven and the caramel will be nice and golden. Sprinkle over the chopped chocolate and leave it for a couple of minutes to melt. 

Once melted, spread the chocolate right to the edges then sprinkle on the chopped cranberry nut mix. Sprinkle over a couple of pinches of salt.

Leave to cool to room temp on the bench and then place in the fridge if you are impatient like me. Once fully cooled and set, remove from the fridge and snap into pieces. 

Store in an air tight container for two weeks at room temp. 16/12/2025
