Garlic Scape Oil Ingredients: 36 garlic scapes, chopped roughly 2 cups extra virgin olive oil 1 tsp kosher salt 1/4 tsp aleppo pepper flakes (or 1/8 tsp red pepper flakes) Instructions: In food processor or blender chop garlic scapes finely. Add to a saucepan with olive oil, salt, and pepper flakes. Stir to combine. Bring to a simmer and let simmer for 15 minutes stirring occasionally. Remove from heat and let sit 10 minutes. Strain through a fine mesh strainer into a heatproof bowl. Cool for 15 minutes then refrigerate. Store in refrigerator for up to 2 weeks or freeze Note! Here’s what it cost to get our 4,000 square foot vegetable garden up and running this year! 200: seeds 150: seed starting potting soil 50: greenhouse 100: new grow light 120: truck load of organic compost 100: tilling 30: 4-inch pots This garden feeds us every single fresh veggies we eat from about June to November. And it produces many things we preserve an entire year’s worth of, like onions, garlic, carrots, squash, potatoes, sauerkraut, pickles, popcorn, tomato products, frozen broccoli, and frozen green beans. So, is $750 more than you thought? Less, or about right? *This is the ongoing cost for the start of the growing season, not the startup cost. This amount also reflects my desire to grow organically and grow lots of unique varieties of everything. One could certainly spend less on things like seeds and soil.
