Can you believe this flatbread is made out of JUST one ingredient and that ingredient is cottage cheese?!! I know right … strange but it worked. This is such a great vessel for many uses. It reminds me of melty delicious cheese. Flatbread: 7 oz of cottage cheese (200g) Italian seasoning Salt to taste Toppings: Chicken breast meat (60g) Garlic confit (7-9 cloves) Sriracha mayo (20g) * homemade * 1 tbl light mayo or kewpie mayo * 1/2 tbl sriracha * 1.5 tsp rice wine vinegar Lettuce or arugula Pre heat over to 375°. Spread cottage cheese into a baking sheet lined with parchment paper. Spread it thin! It needs to be as thin as you can get it. I tried it twice and the first batch was too thick. Put in the oven once it’s pre heated for 35-50 minutes (depending upon your oven and the thickness of the layer) or until sides start to brown. The sides must start to brown for this to work! If you use low fat cottage cheese you may have some liquid that forms on the sides. That’s fine, it won’t affect the cottage cheese flatbread, but you must allow it to brown on all sides before you take it out so use the time as a gage. Don’t be afraid to soak up excess liquid with a paper towel if it’s pushing out more then the oven will burn off! Once it comes out let it rest for about 3-5 minutes or so. It’ll hold its shape and have the texture and feel of melted Parmesan cheese. Once it does top with your favorite toppings and enjoy!
