Just got our order. It gets worse every time we order. This was 1 of 2 boxes. These 2 tiny bunches of kale and 1 bunch of parsley were in this giant box with a bunch of paper. Seems like a waste of space. Their prices are going up to the point where it is cheaper to get organic produce at Whole Foods. This kale was $3.49 per bunch for a small bundle. I can get organic kale from WF or Sprouts for $1.99 for a much bigger bunch.

Am I missing something as to why I should keep paying higher prices for smaller amounts of food?

I had a head of Napa cabbage and made these insanely good Asian-inspired cabbage rolls.

The kids even agreed that they “weren’t bad.” That’s high praise from the tween and teen. 😂

For the filling I sautéed onions, garlic, ginger, broccoli, carrots, peppers and shredded . Yum yum!!!

Hands up if you’ve tried Pumfu 🙋‍♀️🙋

Since one of my kids and I can’t eat soy, Pumfu is a game changer. Its made of pumpkin seeds with a similar texture to tofu. It’s easy to prepare and so versatile, plus it’s full of protein and delicious!

Ok, dinner last night took about 3 days to make. 😂 We made homemade and they were uh-mazing!!

1st, we bought pre-made masa that was . Nixtamalization is the process of adding an alkali solution to dried corn kernels in order to transform them into nixtamal, a product that is more workable, tasty, and nutritious than it would be otherwise. This makes it taste really good and is a total game changer for taste.

Next we sautéed nopales (cactus), zucchini, onions, corn and garlic with dried peppers and lots of seasoning.

Then, we built the tamales which was a bit time consuming but kind of fun.

After that you steam them for an hour.

We served them with avocado and liberal douses of Cholula.

Almost forgot, we also made a dessert version with mashed bananas, cacao powder and pine nuts. It could have used some more sweet but was still pretty good.

Made these delicious huevos de nopales (eggs with cactus) tacos for dinner last night. So good!

—I sautéed prepared nopales and onions, then added in Just Egg and scrambled it together.
—Served in soft corn tortillas with rice, sliced avocados, tomatoes, fajita seasoning and some Cholula sauce.

Easy and satisfying.

Hey everyone 👋

The last year has taken a toll. I lost my aunt, then my mom, then my uncle. Then I broke my foot and was non-weight bearing for 10 weeks. I haven’t been inspired to do much fancy cooking or posting.

I did take up as a new hobby and that’s been a godsend!

Here is a recently finished piece called “Unfastening” that explores my journey from detailed and diligent to carefree, whimsical and colorful.
