🍜 Purple Sweet Potato Somen Miso Soup w/ Sweet Potato 🍠 Collard Greens 🥬 & Shimeji 🍄

Have you ever made miso soup?
~
[Spoiler alert 🚨it’s super easy]
👨🏾‍🍳 4 cups of water + dashi + 1/4 onion and bring to a boil. Add veggies after 7 minutes, then dissolve miso into boiling water using a ladle and another utensil 🍴



Really wanted a winter-seasonal vegetable soup + noodles since it’s been consistently cold lately 🥶

The recipe I referenced started with dashi powder, however the Asian supermarket I go to (99 Ranch Market — where I found the PSP Somen Noodles & Shimeji) only had bonito-based dashi powder. Luckily, I already had some dashi at home!
~
You know you love Japanese food when you have dashi on deck at all times 😅



I found during the beginning of my plant-based transitions that many international cuisines are inherently vegetarian and vegan-friendly. When searching for vegan dashi, I learned that Kombu & Shiitake were already widely used in Japanese cuisine!
~
Sidenote: The dashi powder in the last side can be found at Walmart or Amazon! Yes, let’s ignore the fact that these noodles are purple 😂

Filo Wrapped Cannellini Bean & Mushroom Alfredo Burger w/ Feta Cheese, Caramelized Red Onions, Cherry Tomatoes & Spinach



this concept started off as a simple burger patty, although i really wanted to use a filo wrap. thus, inspired by filo wrapped brie, i combined the burger concept and substituted vegan feta (just enough to not completely ooze out when sliced) and here we are!



Vegan Alfredo provided by . This dish has very minimal additions, as the Alfredo sauce shines through in flavor without appearing to be a feature of the dish at all. Very Kitchen Ninja-like 🥷🏾

remember when i said i love noodles? 🍜 WUMING PURPLE SWEET POTATO NOODLES in a Hawaiian Stir Fry Sauce

how they managed to get 14g of protein per serving in some noodles is 🤯



what makes it Hawaiian? 🔑 switch rice wine vinegar with 🍍 pineapple juice and add brown sugar in your stir fry sauce!



so it’s been decided, this season is called the Kitchen Ninja: Noodle Hunter 🥷🏾

Post # 100: THE KITCHEN NINJA IS not BACK! TLDR: why are a lot of blog recipes so BLAND? no, meal prep isn’t ever returning.



So you decided to read, rant ensues: This messy bowl of “Vegan Pho” is the result of following one of those 30 minute recipes by a blogger that writes an entire dissertation about causes they support having nothing to do with food and links to this and that before getting to a recipe that’s subpar, at best...
~
Even SRIRACHA couldn’t save this bland broth... Okay, so it actually did save the broth in addition to some garlic granules, onion powder, turmeric, aminos and salt 😅 and that took BRAIN POWER, which the recipe was supposed to save people from having to utilize 🙄



Although, that’s my fault. i knew just from the picture, then a few spices that it wouldn’t be anything remotely close to an authentic Vietnamese pho 🍜🤦🏾‍♂️ they say critics are critics because they generally can’t do better, so I guess that means I’m not a critic 🙃

who was YOUR favorite teacher, and what impact have they had on you? let me know in the comments!



Mrs. Kilmer, my 5th grade teacher was the first and only person I had ever met that openly discussed being a vegetarian. She was in her mid-late 50s when I was in her class, and often spoke about running marathons and eating tofu. At the time, this was extremely foreign to me, although I will never forget that it was her answer to my question: “how do yo my have so much energy?” Whenever I think back to seeds planted in my life, that was 100% the first one that wouldn’t be watered by experiences that led me to becoming plant-based!
~
my 6th, 8th, 9th, 11th and 12th grade English teachers had the greatest positive impact on me as a person in terms of instilling confidence and a belief that I could achieve much more than I imagined!



Once a teacher, always a teacher. I intend to continue teaching more about the benefits of mindful, plant-based eating and the relationship between mental health and diet.

What do you do when you fall off your best self? Do you have a system of recovery?

tbh, this is the first time I’ve cooked for myself in idk how long. like, actually took the time to prepare a meal more substantial than a PB&J 😳



that’s right guys, “mister super healthy plant-based man” 🥷🏾🦸🏾‍♂️ isn’t always “mister super healthy vegan man” 🤷🏾‍♂️— the upside to this reality is that I have created a space for grace and a system to get back on track. Stay tuned for more info 👀



🥘: Dolsat Bimbimbap! Korean Rice Bowl featuring some Kimchi, brown rice 🍚, par-boiled & sautéed satsuma-imo 🍠, sautéed carrots 🥕& kale 🥬 , homemade pickled cucumbers 🥒& carrots 🥕 dressed with chili sauce.



This was adapted from a recipe from “Vegan For Everybody,” the first cookbook I’ve ever purchased, a year into being plant-based. Searching for recipes online can be daunting, so I find that while cookbooks may not have everything, they contained well tested recipes.

Are you running your race?



Everyone has their own pace. It’s easy to get caught up in comparisons, or feeling like you have to catch up to those who likely started before you. Some make drastic changes at the drop of a hat, others ease into it.



The important part is that you’re on the track! And if you need to take a break, you can always get back on!



Being “vegan” for over 4 years, my transition took me 2 years before I even heard the word vegan. Do you have to be vegan to be healthy? No. Although, i can say from experience, that it makes it a lot easier!

How do you brunch?



h**p protein spelt waffles 🧇 w/ strawberries 🍓 and strawberry-infused maple 🍁
~
Sometimes, you just gotta get in the kitchen and make something without a reference!
- 1 scoop of H**p Protein
- 1 cup of spelt flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- dash of cinnamon & nutmeg
- 1 c of plant milk



combine dry, add wet, waffle iron and boom — that’s it!

Comfort foods AREN’T the killer!



it’s the relationship with the comfort foods, which mirrors how healthy your relationship with yourself is! we naturally seek to experience the comfort of these foods as a form of control when faced with external stressors.



ironically, giving into this cycle of eating comfort foods to have control is how one may lose control!



a healthier relationship with yourself will provide a healthy relationship with the comfort food. if you feel that you have a dependency on a comfort food, there is likely a larger issue at play.
