A little classical music

A very crunchy schnitzel with a very fresh slaw of sorts. Very, very yum! Enjoy! ❤️

INGREDIENTS, serves 4
For the chicken:
4 chicken breasts, flattened with a mallet (ask butcher to do it if you don’t have one)
2 eggs
1 cup panko breadcrumbs 
Half a cup almond meal
1 teaspoon paprika
1 tbsp za’atar
1 tsp dried oregano
1 tsp salt
Black pepper
Neutral oil for frying (I used coconut oil)
Lemon for serving
Aioli or mayo for serving 

For the salad:
1 medium fennel, finely sliced
1 green apple, halved and finely sliced into thin sticks 
4 celery sticks, shaved lengthways with a peeler 
A handful roasted, salted nuts, crushed (I used mixed nuts but you can use whatever salted nuts you like)
A handful dill and fennel fronds, chopped
A handful dried currants
A scatter of fennel seeds
A generous glug of olive oil
A few splashes apple cider vinegar
A dollop Dijon mustard
Salt

METHOD:
- Prep your salad in a bowl with all the salad ingredients except for the dressing. Only dress it with the olive oil, cider vinegar, salt and dijon before serving
- In bowl or on a plate, mix the panko with ground almonds and all the seasonings. Mix well
- In a separate bowl, beat two eggs
- Dip each piece of chicken in the egg, drip it off then coat very well in the dry mix
- You can now dress your salad before you start frying the chicken
- To fry the chicken, heat a lot of oil in a frying pan on medium to high heat so that the entire base of the pan is covered in oil plus a little more than that. We’re doing something in between a deep and a shallow fry
- When the oil is hot hot hot, fry the chicken in it until it is golden and crunchy on both sides
- Serve with the slaw, some aioli, a sprinkle of salt and a squeeze of lemon
