Reading some blogs by John Douillard on Lifespa.com. Love this quote - "There is an old saying that goes, “When the sun goes down, the cooks go home.” After hours, the ability to digest food becomes much more challenging for your body. Eating after hours also disturbs the action of our biological clock, upsets your glucose homeostasis and puts us at risk for potential obesity."

Made black beans from scratch for the first time! I'm always intimidated by making beans myself - when I've tried in the past they were bland, hard and undigestible. These turned out good though! I followed this recipe from Cafe Johnsonia.
I did soak the beans for 24 hours prior to cooking, changing the water a few times. It says you don't have to but since I usually have a tough time digesting beans, I figured better safe than sorry. It worked! No digestion problems. Oh, and I used veggie broth rather than water.
