✨creamy garlic chicken + zoodle skillet! ✨ it’s that time of year when our gardens and grocery stores and instagram feeds are filled to the BRIM with zucchini, and if you’re like me, you’re almost almost allllmost ready to break up with these big summer greenies. but summer ain’t over till it’s over and we don’t want to enter fall with any regrets.
so let’s carpe diem. tis still the season to zoodle! 🥒 and no better way than paired with seared paprika chicken and an ultra garlicky parmesan sauce so good you’ll want to eat it by the spooonn! feels a little bit fancy but takes just 25 minutes from start the finish and comes with only one pan to clean. I recommend sopping up the sauce with crusty french bread and/or curly noodles. 😘
CREAMY GARLIC CHICKEN & ZOODLE SKILLET
(gluten-free • grain-free • keto-friendly • dairy-free with modifications)
4 small chicken breasts • 1-2 tbsp. olive oil • 1/2 tsp paprika • 1/2 tsp onion powder • salt and pepper to taste • 1/2 small onion, finely chopped • 2 cups spiralized zucchini noodles • 1.5 cups sliced white or brown mushrooms • 10 cloves garlic • 1-2 tbsp. butter • 1/2 cup chicken broth or dry white wine • 1 cup cream or unsweetened dairy-free creamer • 1/2 cup Parmesan (use vegan parm for dairy-free) • 2 tbsp. parsley
