Ingredients:
1 tbsp Irish Sea Moss Gel (Chondrus Crispus)
1 tsp dried ginger root
½ tsp burdock root
½ tsp sarsaparilla root
Slice of lime or 2 thin mango slices (optional)
Instructions:
1. Add herbs to French press, pour in 10–12 oz hot water.
2. Steep for 10 minutes.
3. Add your sea moss gel and fruit slice before pressing.
4. Stir gently — drink warm for energy and immunity.

🥗 1. Avocado & Cucumber Salad with Key Lime Dressing
Ingredients:
1 cucumber, thinly sliced
1 avocado, diced
1/4 cup red onion, sliced
1 tbsp fresh dill
Juice of 1 key lime
1 tbsp olive oil
Sea salt to taste
Instructions:
1. Combine cucumber, avocado, onion, and dill in a bowl.
2. Whisk lime juice, olive oil, and salt together.
3. Pour dressing over salad, toss, and serve fresh.
🥒 5. Stuffed Zucchini Boats
Ingredients:
2 medium zucchinis, halved & scooped out
1/2 cup wild rice (cooked)
1/2 cup mushrooms, chopped
1/4 cup cherry tomatoes, diced
2 tbsp olive oil
Fresh oregano & thyme
Sea salt to taste
Instructions:
1. Sauté mushrooms and tomatoes in olive oil.
2. Mix with wild rice and herbs.
3. Fill zucchini halves with mixture, drizzle olive oil, and bake at 375°F for 20 mins.

🥬 4. Callaloo & Quinoa Stew
Ingredients:
2 cups fresh callaloo (or substitute kale)
1/2 cup quinoa (rinsed & cooked)
1/2 onion, diced
2 cloves approved onion variety
1/2 cup cherry tomatoes
2 tbsp avocado oil
1 tsp sea salt
1/4 tsp cayenne
Instructions:
1. In a pot, sauté onion and tomatoes until soft.
2. Add callaloo and cook until wilted.
3. Stir in cooked quinoa, season with salt and cayenne.
4. Simmer 5 mins and serve warm.

🌮 3. Chickpea & Amaranth Grain Tacos
Ingredients:
1 cup chickpeas (cooked)
1/2 cup amaranth grains (cooked)
1/2 red onion, diced
1/2 bell pepper, chopped
1 tbsp avocado oil
1/2 tsp sea salt
Soft spelt tortillas
Fresh cilantro & avocado slices
Instructions:
1. Sauté onion and bell pepper in oil.
2. Add chickpeas and amaranth, season with sea salt and approved seasonings.
3. Serve in spelt tortillas topped with cilantro and avocado.
