The NWPPN network is an amazing organization led by parents of children (and adults) affected by PANS/PANDAS - please share the post to increase awareness and raise funds to help low income families access services and educate the public. This condition is still not recognized or diagnosed properly.
Basically, some people develop notable and sometimes severe psychiatric disturbances as a result of infections. Their immune system becomes dysregulated; it is the neuroinflammatory process that is at the root of the psychiatric symptoms (neuroinflammation, like short circuiting the brain). Some of the patients end-up institutionalized or hospitalized - and the process can last for YEARS until someone diagnoses PANS/PANDAS correctly.
How many children (and adults) in the "system" have this and are undiagnosed? Who knows, but this is treatable and dramatically changes the lives of those affected.
Wednesday Walk 4 Education UPDATE! 📢
If you haven’t heard already 👂, October 9th is PANDAS/PANS AWARENESS DAY 💥 and we are WALKING AND FUNDRAISING FOR EDUCATION in 2024 🚶
We’re also raising funds to distribute as many books on PANDAS/PANS to our LOCAL SCHOOLS as we can 🏫
We are so THRILLED about the donations we’ve received to date and want to share our utmost gratitude to those who have already given 🙏

Cauliflower with ginger, garlic and cilantro.
1) Cut ginger and garlic in small pieces.
(Ginger is easy to peel by scraping it with a knife, cut dried out parts)
2) Cut cauliflower florets and chop cilantro 2/3 of a bunch)
3) Sauté garlic and ginger in olive oil till slightly toasted and remove with a slotted spoon or a spoon against the side of the pot
4) Add the cauliflower and sautéed medium heat, stir occasionally,
5) When a little browned, add 2 tablespoons of water (or less, depending on size of cauliflower) add salt and pepper or other spices, cover and cook at low heat, stirring occasionally.
6) When almost ready add cilantro and cook for another couple of minutes

“We are pleased with the HERC determination on coverage for PANDAS/PANS children in Oregon,” said Sarah Lemley, executive director and co-founder of Northwest PANDAS/PANS Network, an advocacy group that helps parents file appeals and seek coverage. “We plan on continued efforts to ensure this coverage determination is enforced with all insurers in Oregon. Equitable access to treatment will help address health inequity in our state but not until all Oregon insurers are held accountable to do the same.”

How to stay healthy while traveling: leeks boiled and seasoned with lemon and olive, dolmas (grape leaves) arugula salad with walnut oil, calories from olives and of course, anthocyanins from red wine, super important.
Leeks are very easy to store and keep fresh.
Slice them 5 thick, boil and add them to salads or other dishes. Super easy and inexpensive. Enjoy them often

With the leftover dressing from the celeriac salad, I cobbled together another quick meal. Grated raw beet (it does not taste earthy in a salad but adds sweetness, super tasty and easy). Olives and avocado added the day and calories. Turned out to be tasty but it was definitely a quick fix for lunch between patients

This is an easy favorite for fall and winter - celeriac salad, with the roots from celery. You can make a large batch and eat next day. Simply peel with potato peeler, grate with food processor and add a vinaigrette made with a little mayonnaise and mustard. I added a touch of truffle oil but that is optional.

This weekend: very French and seasonal. Endive salad with crushed walnuts and apples; vinaigrette with balsamic and mustard.

Tonight a quick throw things together:
A can of coconut milk, half jar left over of Indian Aghaar sauce (or other spicy sauce) and left over veggies I had in the fridge: 3 celery stacks, 2 carrots, 1 onion, bell pepper and two bags of bean sprouts (rinsed)
Warm the coconut milk, sauce and 1 quart to 1 pint water, get it real hot and add all the vegetables, bring to boil then decrease to low temp and cover to simmer until veggies are cooked.
Any combination of veggies or sauce will do. I had very little sauce so I added some leftover puréed tomatoes, grated 1 inch of ginger and 1 stick of cinnamon and salt to taste, squeezed a little lemon to adjust the taste at the end.
It is super fast and easy, and easy to make large batches.
